Young Chefs Club

On the 21st of April we attended the Durban Country Club for a Brandy Competition Info Day where we learnt about how Brandy is made and what the rules are for the competition. It was a great experience because we got to meet some of the best chefs in Durban and we got to taste some delicious pastries.

Swiss Roll with Chantilly Cream dredged in Icing Sugar and garnished with Fresh Strawberries and Sables garnished with Chocolate and dusted with Icing Sugar


Croquemboche filled with Creme Patissiere dipped in Caramel and Decorated with Spun Sugar and Fondant Roses


Frangipane Tartlets topped with Peach brushed with Apricot Glaze and garnished with Fresh Mint


Challah Bread topped with Poppy Seeds and served with Butter


Scones topped with Fresh Cream and Strawberry Jam and garnished with Fresh Mint and Butternut and Sage Quiche garnished with Crispy Sage


Soft Rolls topped with Poppy Seeds and Sesame Seeds served with Thyme Butter


Eclairs topped with Chocolate and Filled with Chantilly Cream


Chocolate Madeira Cake dusted with Icing Sugar and Fruit Tartlets with Creme Patissiere topped with Kiwi Fruit and Strawberries and Garnished with Poached Pear and Fresh Mint


Orange and Almond Cake with Praline Cream garnished with Brittle and Icing Sugar and Assorted Biscuits with Royal Icing


Flourless Carrot Tea Cake with Cream Cheese Frosting and Sprinkles and Langues De Chat Dipped in Chocolate and Garnished with Fresh Strawberrires


Chocolate Chip Cookies dusted with Icing Sugar, Checkerboard Biscuits and Shortbread Caramel Millionaires


Sables garnished with Chocolate and dusted with Icing Sugar and Brandy Snaps filled with Coffee Cream and garnished with Raspberry and Grated Chocolate


Koeksusters sprinkled with Desiccated Coconut


Vetkoek dredged with castor sugar

Crispy Chocolate Nut Crisps and Sautéed Banana garnished with Fresh Mint, Sliced Almonds and Whipped Cream


Baked Apple, Apple Crisps and Pear en Papillote garnish with Sliced Lemon


French Crepes with Roasted Peaches and Orange Caramel Sauce and Roasted Pepper and Chilli Jam
